Why can’t I convert cups to grams directly?
A cup measures volume and a gram measures weight, so the conversion depends entirely on the ingredient. A cup of butter is 227 g, but a cup of honey is 340 g and a cup of cocoa powder is only 84 g.
Does the cup size matter?
Yes. A US customary cup is 236.59 mL, a US legal cup is 240 mL and a metric cup is 250 mL. Using a metric cup for butter gives 240 g instead of 227 g — about 6 percent more.
